Stuffed Potatoes
These are the potatoes of my dreams - literally.
The potatoes are baked, flesh removed - mixed with bacon, cheese, sour cream and spring onions, put back into their skins, topped with MORE cheese and baked again.

Cooking Time: 75 mins + 15 mins
Serves: 8
Ingredients:
4 Sebago potatoes (dirty ones), washed
25g butter, chopped
2 TBS sour cream + extra for topping
6 short cut bacon pieces, finely diced
1/4 cup chopped spring onions
2 TBS chopped chives
Shredded cheese - 1/2 cup + additional for topping
Salt & Pepper to taste
Method:
Preheat oven to 200c
Ensure your potatoes are thoroughly washed and no dirt is left on them
Prick them with a fork a few times all over
Bake on a tray for 1 hr & 15 mins
Meanwhile, cook the diced bacon in a hot pan until golden and crispy
Remove the potatoes from the oven and once you are able to handle them, cut them in half longways
Scoop out the potato leaving a thin layer to keep the skins intact
Place into a bowl and add the butter and sour cream. Mash until combined
Add in the bacon (keep some aside for topping later), spring onions and chives.
Add salt & pepper to taste
Spoon the potato mixture back into the potato skins until they are all full. Top with more cheese
Bake for 15 mins until golden and the cheese is melted
Serve topped with extra chives, bacon and sour cream!
