Scones
Is there anything better than a fresh scone, with jam and cream?!
I think not! I’ve had many people remake these scones and tell me that it is the best recipe they have used, so I’m sure you will love them too!
Scones are such a quick & easy dessert to whip up when you’re feeling like them or if you have guests coming over.

Prep Time: 15 min
Cooking Time: 12-15 min
Serves: 12
Ingredients:
350g self-raising flour
1 1/2 TBSP icing sugar
1.5 TSP baking powder
1/2 tsp fine salt
150ml pure cream
150ml milk
45g butter, melted and cooled
1 tsp vanila essence
1 TBS milk, for glazing
5cm cookie cutter
Whipped cream:
1 cup whipping cream
1 tbsp white sugar
1/2 tsp vanilla extract
Method:
Preheat oven to 190c
Double sift flour, sugar, baking powder and salt into a large bowl
Whisk together the cream, milk, melted butter and vanilla in a second bowl
Make a well with the dry ingredients, pour in cream mixture
Use 2 butter knives to bring it together, using a criss-cross shopping motion
Place dough onto a floured work surface and use your hands to flatten to 3cm thick
Cut using a 5cm cookie cutter, cut into individual scones and then re-roll the off cuts and cut more scones
Brush with milk
Bake for 12-15 mins
Set aside for 10 mins
Top with jam, and then cream and enjoy with a cup of tea!
