Crunchy Smash Potatoes
These crunchy smash potatoes are on repeat in my house at least once a week!
They are just the PERFECT side dish to so many meals. I especially love them as a side to when I am doing a roast dinner, paired with my roast chicken and you’ve got yourself a great meal!
Also, it’s just fun to smash them before you bake them! The crispy edges and skin, then the fluffy potato in the middle - so yum.

Prep Time: 25 min
Cooking Time: 45 min
Serves: 2 as a side
Ingredients:
Baby chat potatoes
Butter (about 25g per 10 potatoes)
Olive oil (about 1 TBS per 10 potatoes)
Sea salt flakes
Onion powder
Rosemary
Method:
Bring a pot of water to a boil
Add the potatoes and boil for 25 mins
Preheat oven to 200c
Drain the potatoes and place on a lined baking tray
Use a cup with a flat bottom or potato masher, and very carefully squish the potatoes (so they don’t completely crumble and hold their shape)
Mix together melted butter and oil and drizzle over the potatoes
Top with sea salt flakes and onion powder
Place Rosemary in the pan
Bake for 45 mins until crunchy and golden!
