Lemon Caper Chicken
Crispy chicken cooked in a lemon-buttery sauce and then topped with capers - delicious!
This is one of my favourite weeknight recipes that is on rotation at my house! It is a great weeknight dinner as it’s quick and relatively healthy.
The chicken is cooked until crispy and then you make the beautiful lemon butter sauce and return the chicken to the pan and top with one of my favourite things - capers!
I love to serve this with a fresh green salad and some potatoes. I hope you love it as much as I do!

Serves: 4
Ingredients:
Olive oil
2 x chicken breast, cut into thin pieces
1/4 cup flour
1/2 TSP salt
Cracked pepper
1/2 TSP onion powder
1/2 TSP garlic powder
Sauce -
1 TSP Olive oil
2 crushed garlic cloves
1/2 cup white wine
25g butter
1/2 lemon squeezed
Capers in vinegar, drained
Chopped parsley
Method:
Heat a pan over a high heat and add some olive oil
Dip the thin pieces of chicken breast into the flour on both sides
Cook for 4 minutes on one side and then about 3 minutes on the other as it will finish cooking later in the sauce. Remove from pan
Reduce heat to medium, add the olive oil into the pan with the crushed garlic. Stir and cook until melted
Add the white wine and let it simmer until reduced - about 5 mins
Add juice of 1/2 lemon stir and simmer for a few minutes.
Add in the butter and let it melt.
Add the chicken back in and then top with capers & fresh parsley
Serve with a fresh side salad and some roast potatoes & enjoy!
