Honey Citrus Drumsticks

My ideal weeknight meal - easy, healthy but so yummy!

These chicken drumsticks are some of the best you will try, the mix of the honey, lemon and lime juice creates the perfect sweet and sour marinade.

The juices that are left in the pan after they are cooked is literally liquid gold! Soooo good, I cover the drumsticks in it and it takes them to the next level.

Also, the potato wedges - wow! Serve with a side salad and you have a dinner the whole family will love.

Serves: 4


Ingredients:

  • 8 chicken drumsticks

  • 1 lemon, juiced

  • 1 lime juiced

  • 1/4 cup olive oil

  • 3 TBS honey

  • 3 garlic cloves crushed

  • 1 TSP dried oregano

  • 1 TSP sweet paprika

  • 1/2 TSP Sea salt flakes

  • 4 washed potatoes

  • 1/4 cup Olive Oil

  • 1 tsp Sweet paprika

  • 1 tsp onion powder

  • Salt and pepper

 

Method: 

Preheat oven to 200c fan forced

Mix the juices, olive oil, honey, crushed garlic, oregano, paprika and sea salt flakes in a large bowl or large ziplock bag. Mix to combine

Add in the chicken drumsticks and let it marinate for 1 hour minimum

Meanwhile, cut the potatoes into wedges and place on a lined baking tray

In a small bowl, mix 1/4 cup olive oil with 1 TSP of sweet paprika and onion powder

Using a pastry brush, brush the potatoes with the oil mixture on the side that is facing up and then top with salt and pepper. Keep the remaining oil for later

Bake both the chicken and wedges at 200c for 1 hour until the wedges are crispy. Turn them halfway through and brush with the remaining oil

Once cooked, remove the chicken from the tray and place the tray back in the oven for 5-10 mins for the juices to thicken (if it needs it).

Reserve the liquid gold and pour it all over the chicken!

Serve with a side salad and enjoy!
