The best lamb cutlets
These are the juiciest, tastiest lamb cutlets you will try!
No joke these are on the menu at my house once a fortnight! I can’t get enough of them, they are such a great weeknight meal as they take 10 mins to prepare and 10 mins to cook!
This is my friend’s Mum’s recipe, I have been obsessed with them for as long as I can remember and they are a must at any BBQ! I love serving them with a fresh side salad and a squeeze of extra lemon!
Cutlets can be expensive, so I buy in bulk from Costco and freeze them! The only reason I need a membership haha!
If you have the time, I like to marinate mine in the morning before work so they have time to soak up all the flavour!

Serves: 2
Ingredients:
6 lamb cutlets
1 TBS olive oil
1 lemon juiced
1/2 TBS sweet paprika
1 TBS dried oregano
2 TSP salt
5 garlic cloves crushed
Method:
Arrange the cutlets in a baking dish/bowl
Mix together all other ingredients in a jug and pour over the cutlets. Cover and leave to marinate - 15 mins minimum, ideally all day!
Heat a frying pan or bbq over a high heat until smoking hot
Cook for 3 mins each side (if they are thicker add an extra minute & if you like on the rarer side then do 2.5 mins each side)
Cover with foil and rest for 5 minutes before serving
Serve with a fresh salad and enjoy!
