Creamy Mushroom Chicken

Mushroom sauce is life!

This recipe is so delicious, such a quick and easy weeknight meal that your whole family will love!

I pride myself on making a delicious mushroom sauce, and I have been told many times that is the best!

I like to serve this with a side of greens, beans or asparagus with some mash or baked sweet potato!

Ingredients:

Mushroom Sauce:

  • Butter - 2 TBS

  • Mushrooms (the small container of pre-sliced)

  • 5 garlic cloves crushed

  • White wine - 1/4 cup 

  • Pure Cream - 300ml 

  • Stock powder - 1 TBS

  • Worsterchire sauce 2 TSP 

  • Cornflour to thicken - Start with 1 TSP mixed in water and then another TSP if you think it needs it

  • Chopped parsley 


Chicken:

  • 2 chicken breasts

  • 1 TSP Onion salt,

  • 1 TSP garlic powder

  • 1/2 TSP pepper

  • 1 TBS olive oil 

 

Method: 

Cut your chicken breasts into thin slices - you should get 2-3 per piece

Coat them in oil and then then onion salt, garlic powder and pepper 

Heat a fry pan over a high heat and then add a little bit of oil and add the chicken. Cook until golden on both sides - about 4 mins each side until cooked through.

In another pan, heat a pan over a medium heat and melt the butter. Add in the mushrooms and cook for 5 mins. 

Add in the garlic and stir and cook for another minute

Add in the white wine and cook for a few mins until reduced, stirring occasionally 

Add in the cream, stock powder and worsterchire sauce and stir until combined.

Bring to a simmer and let it simmer for a few mins until it starts to thicken

Mix 1 TSP cornflour in water until combined and pour into the sauce when it is bubbling, stir quickly to help thicken the sauce. If you want it thicker, repeat this step. 

Once thickened, add in parsley and stir 

Add the chicken and pan juices into the sauce 

Serve with mashed potato and greens!
