Spaghetti Alla Nerano
A pasta recipe specific to the Amalfi Coast region of Italy that is *chefs kiss!
This recipe comes from a small town on the Amalfi/Sorrentina coast in Italy, from a small town in Nerano. Many restaurants in the Amalfi Coast will serve this dish, and you won’t really find it anywhere else in Italy. It is recipes like this that are really special, and when I had it in my recent travels to Italy I knew I had to share the recipe with you all!
I first tried this dish at Conca Del Sogno, a lively restaurant that is a built into the cliff near Nerano with the most incredible views. If you ever find yourself in this area, you must ensure you visit! Go for the food, and stay for the views and ambience.
The ingredients for this recipe are simple - spaghetti, zucchini, provolone, garlic, olive oil and butter. That is all!

Serves: 4
Ingredients:
4-5 small zucchinis, sliced thin
2 garlic cloves
1/2 cup olive oil
100g grated provolone (purchase in a block from a deli)
50g butter, cut into cubes
Salt and pepper to taste
Spaghetti
Method:
Bring a pot of boiling water to a boil. Add in a good amount of salt
Heat a pan over a medium heat and add the olive oil
Smash the garlic clove (keep it whole)
Add the garlic into the pan and let it infuse for a minute
Add in the zucchini - do it in 2 batches to ensure they evenly cook. Once they are browned, remove from the pan with a slotted spoon and set aside.
Add the spaghetti in whilst the second batch of zucchini is frying
Once the spaghetti is cooked, drain reserving 1-2 cups pasta water.
Add the spaghetti to the oil - be careful as the oil may splatter if there is water!
Toss to combine and add in the cubed butter and mix until melted.
Add in the grated provolone and stir vigorously to ensure it melts through. Add some pasta water to help it melt and mix until combine, Add more pasta water if you think it needs it.
Add the zucchini back in and add salt to taste
Top with fresh basil and enjoy!
