Satay Noodle Stirfry
Aka my favourite stirfry!
There is nothing better than when the rice noodles soak up that delicious satay sauce!!! This satay sauce is what my dreams are made of, it is perfect in every way! It is sooo delicious!
I’ve made this stirfry with both chicken & beef before, both are super yummy. I love to pack it with vegetables as well. This also is great as a stirfry without noodles, served with rice!
The rice noodles are a must for this - you are able to purchase them from your local asian grocer. Sometimes they come in rolls, and you just need to cut them into 3cm pieces and then run them under hot water until they unravel.

Ingredients:
Satay Sauce:
Satay sauce:
3/4 cup peanut butter
1 TBS light soy (sub normal soy)
1 tbs kecap manis
1 TBS siracha
1 cup coconut milk
1 tbs fish sauce
2.5 tsp curry powder
1 tsp sugar
1/2 cup water
Stirfry:
Thick rice noodles (sub Changs pad Thai noodles),
1 onion sliced
2 garlic cloves crushed
Protein of choice - I did 2 x sirloin steaks
Veges of choice - I did broccoli, snowpeas and capsicum
Spring onions & crushed peanuts for garnish
Method:
Mix all of the satay sauce ingredients together with a fork/whisk until it all comes together and is no longer lumpy. Set aside
Heat a pan over a high heat and cook your steaks 2 mins each side. Cover with foil to rest
Heat a wok over a medium high heat and add your onions and garlic.
Cook for a few minutes until they start to brown. If you wanted to do it with chicken, I would fry that off first and then set aside
Add in your vegetables and cook for a 5 minutes until softened.
If your noodles are in long rolls, then cut them in 2 cm pieces and pour boiling water over them for 30 seconds. Strain and add into the pan. The noodles should unravel further in the sauce
Pour the sauce over and stir through.
Let it simmer for about 5 mins until the sauce reduces and thickens
Slice your meat into thin slices and add into the stirfry
Top with spring onions and crushed peanuts
