Rigatoni Alla Vodka

This recipe is a popular American style pasta, that was recently made even more famous by Gigi Hadid!
It is such a delicious pasta, if you are craving a pink sauce that isn’t too heavy. The main ingredients are tomato paste, vodka and cream and they come together beautifully to make a sauce that coats each piece of Rigatoni!
The vodka adds an element of flavour that you normally wouldn’t get from other ingredients, it adds an element of heat, but also helps balance the tomato and cream.

Serves: 4
Ingredients:
2 TBS Olive oil
1 eschalot, finely diced (or 1/2 red onion)
4 garlic cloves crushed
1 TSP chilli flakes
1/4 cup double concentrated tomato paste
1 shot Vodka
300ml thickened cream
1/4 cup finely grated parmesan cheese
Salt to taste
25g butter
Rigatoni or pasta of choice
Method:
Cook pasta as per pack instructions, reserve 1/4 cup pasta water
Heat a pan over a medium heat and add the olive oil
Add in the eschalot, garlic and chilli and cook for a few mins until softened
Add the tomato paste and cook for 2 mins until it starts to caramelise
Add in the shot of vodka and let it simmer for a few mins
Add in the cream and stir to combine
Add in the parmesan cheese and mix until melted.
Salt to taste
Add in the cooked pasta, a little bit of pasta water and the butter and mix until the butter is melted and combined
Serve topped with additional parmesan and enjoy!
