Pulled Pork Carnitas

Melt in your mouth juicy pork for your next Mexican fiesta!

If you are ever planning a Mexican dinner, this is a must have recipe! It is pork coated in a special spice mix and then slow cooked in orange & lime juice until it falls apart. Then you fry it quickly at the end of the edges get nice and crispy!

I served on soft tacos with pickled onions, some red cabbage, guac and of course coriander for freshness!

This recipe does require a bit of time to slow cook the pork in the oven, however as always every second is worth it when you are eating it.

If you do not have an oven-proof pot, then you are able to do this in a baking tray and cover tightly with foil.

Ingredients:

  • 1.5kg boneless pork shoulder (doesn’t matter if the skin is on and remove the netting)

  • 2 oranges juiced

  • 1 lime juiced

  • 1 TBS maple syrup

  • 1 cup chicken stock

  • 1 TBS sweet paprika

  • 1/2 TBS smoked paprika

  • 1/2 TBS cumin

  • 1 TSP onion powder

  • 1/2 TSP salt

  • 1 TBS olive oil

  • 1 jalapeno, thinly sliced

  • 1 onion, thinly sliced

  • Pickled onions, red cabbage, guacamole and soft tacos to serve!

Method: 

Preheat oven to 160c fan-forced

Mix the spices in a bowl to create the spice rub - sweet paprika, smoked paprika, onion powder and salt. Add 1 TBS of olive oil and mix until it forms a paste.

Thinly slice your onion and place it in the base of an oven proof pot. Add the sliced jalapeno

Pour the liquids into the base of the pot - orange & lime juice, chicken stock and maple syrup

Rub the spice mix all over the pork and place into the pot, skin side up.

Place a tight lid on and into the oven for 3 hours until it is falling apart. Check about halfway to make sure there is enough liquid left in the pot, if there isn’t then add some water

Remove the fatty layer from the top and discard. Shred the pork meat with 2 forks

Heat a frying pan over a high heat and add a little bit of oil. Add the pork to the pan and fry for a few minutes until crispy. Spoon some of the juices from the pot over the meat.

Serve with soft tacos & enjoy!
