Prawn Linguine
An easy but flavour packed recipe that everyone will love!
A prawn linguine is a must have in your recipe repetoire. It is easy to make, but super impressive and packed with flavour!
Where possible, purchase green king prawns that are still in their shell and peel them yourself - they are much fresher and leaving the shells on will add flavour to your sauce!

Serves: 2-4
Ingredients:
14 green prawns
8 garlic cloves, crushed
Pinch of Chilli Flakes
25g butter
Drizzle olive oil
1 eschallot or 1/4 red onion
Half bunch parlsey, finely chopped
1/2 cup dry white wine
1 TBS tomato paste
1 x 400ml bottle tomato passata
Linguine
Method:
Peel your prawns, leaving the tail intact
Combine prawns with 1 TBS of the crushed garlic and chilli
Heat a pan over a medium heat and add the butter and drizzle of olive oil
Add the prawns and cook for about 1 minute on each side, until they turn orange and then flip. Do not overcook them, they will continue to cook!
Meanwhile, boil the water for your pasta and add a good pinch of salt
Add the remaining garlic, onion and half the parsley and cook for a few minutes
Add the wine and turn the heat up and cook until reduced
Add the tomato paste and stir and cook off for a minute
Add the passata and simmer for 10 minutes
Cook the linguine as per packet instructions
Once the pasta is cooked, transfer the pasta straight into the sauce and mix to combine
Add the prawns and mix until warmed through
Top with fresh parsley & enjoy!
