Marry Me Pasta with a Twist
Could a pasta dish really be the secret to a proposal?
While I can’t guarantee a ring, this recipe just might have the power to woo anyone lucky enough to try it! Inspired by the viral “Marry Me Chicken” pasta on TikTok, this dish swaps the traditional chicken for spicy Italian sausage, taking the flavor to the next level.
The sundried tomatoes, mushroom and sausage pair perfectly together and the addition of sweet paprika gives it a little smokey element which elevates the dish.
I have used Farfalle (bow pasta) for this recipe and it works really well as the little grooves soak up that sauce, however feel free to use whatever your heart desires.
This is a super quick and easy weeknight dinner, that comes together in 20 minutes so a good one to have in your weeknight recipe repetoire, or great for when hosting a big group of people. Also, it’s one pot (well 2 including the pot to boil the pasta) which is a massive win!
As always, let me know if you try it in the comments or reach out to me on Instagram @cookingwithdanie if you have any questions!
Prep Time: 5 mins
Cooking Time: 20 mins
Serves: 4
Ingredients:
4 Italian Sausages - I used spicy italian (Sub for chicken breast if you do not want sausage - marinate in the oil from sundried tomatoes and some sweet paprika and italian herb and fry off and add back in later)
3 garlic cloves, crushed
1 punnet of sliced mushrooms (350g)
270g jar semi-dried tomatoes (sundried will work too, semi-dried are softer and juicier)
3 TBS tomato paste
1 TSP Sweet Paprika
1 TBS Italian Herbs
1 cup chicken stock
350ml thickened cream
3 handfuls of spinach
1/4 cup parmesan cheese - grated
Farfalle (bow) pasta - half box
Fresh basil to garnish (optional)
Method:
Prepare your pasta as per packet instructions - this sauce comes together really quickly so ideally you want to put the water on the boil when you start heating the pan for the sauce
Heat a pan over a high heat and add some of the oil from the semi-dried tomatoes
Remove the sausages from their casing and break into smaller pieces and add to the fry pan. Fry until browned
Add the garlic and mushrooms and cook for a few minutes
Add in the tomato paste and stir to combine. Let it caramelise for 1 minute
Add in the sweet paprika and Italian herbs
Add the semi-dried tomatoes, with a bit of the oil - not all of it as you don’t want the sauce to split when you add the cream!
Add the chicken stock to deglaze the pan and simmer for 1-2 minutes
Add in the cream and mix well to combine
Let that simmer on a low heat for 10 minutes, or until reduced and thickened
Salt to taste
Add in your handfuls of spinach and stir through
Add in the parmesan and stir through
Once the pasta is cooked, drain and add into the sauce
Stir until combined, top with fresh basil and more parmesan and enjoy!
