Gnocchi

Gnocchi is definitely one of my favourite things to cook (and my most requested dish from my friends!) Whilst it may seem daunting, I promise you it’s not and with this recipe you will be a pro in no time!

As children, my cousins and I would spend our school holidays at Nonna’s rolling gnocchi all day, whilst there was a pot of sauce on the stove cooking. We loved it, but we loved eating it even more! It is such a special memory of mine!

My gnocchi recipe is fail-proof, but there are a few key things you need to do to make sure they work out! Use fresh potatoes (don’t buy the ones in the bag) and use the Italian 00 flour which can be found in the flour section!

I generally serve Gnocchi with just a red based sauce, and then lots of mozzarella so it goes nice and cheesey. However, you can serve it with my Bolognese also - or my four cheese gnocchi!

Prep Time: 30 min

Cooking Time: 45 min + 5 mins to cook them

Serves: 4


Ingredients:

  • 500g desiree potatoes (red skin potatoes)

  • 1 cup 00 Italian Flour

  • 1 egg, beaten with salt

  • 2 TBS finely grated parmesan

 

Method: 

Place your potatoes in a large pot and cover with water. Bring to a boil and cook until a skewer very easily goes through the potato to the other side. This is important, it should very easily go through, if it doesn’t - they’re not ready yet.

Let them slightly cool until you can handle them

Remove the skin with a small knife and then cut into quarters

Put through a potato ricer OR mash them very well with a potato masher

Flour your bench space and hands

Add half the flour, the egg and parmesan and bring together with your hands.

Continue to add more flour until it is no longer sticky and feels like a light fluffy dough

Roll into a ball and cut into 4. Cover the pieces you are not using with a tea towel so it doesn’t dry out

Roll each section out into a long sausage on a floured bench and then cut into little pillows

Bring a pot of water to a boil and add lots of salt

Add the gnocchi in batches and cook until they float, once they float they’re ready!

Add to your sauce of choice and enjoy!
