Chorizo & Chimichurri Rolls
One of the most delicious rolls you will ever have!
A really nice crusty bread roll is a must for this recipe, as it will soak up the chimichurri and goes nicely with the Chorizo.
For this recipe, it’s also best to buy a good quality Spanish Chorizo, which you can find at specialty stores or Harris Farms.
Top with your favourite salads - I use lettuce, tomato and onion and cheese of course! So delicious and ready in no time!

Ingredients:
2 bread rolls - I used a sourdough bread roll
2 good quality Spanish Chorizo
Iceberg lettuce
1 x Tomato
1/2 red onion
Chimichuri:
1/4 cup parsley
1/4 cup mint leaves
1/4 capsicum
1 TBS Red Wine Vinegar
1/2 Lemon squeezed
2 garlic cloves
2 TBS olive oil
Pinch chilli flakes
Pinch Sea salt flakes
Method:
Prep the chimichurri by finely chopping the parsley, mint and capsicum. Add crushed garlic, chilli flakes and sea salt flakes
Mix in the lemon juice, red wine vinegar and olive oil. Mix until combined and taste to ensure the flavours are balanced. Set aside
Prep your salad - finely shred lettuce, thinly slice tomatoes and red onion
Halve the chorizos longways
Heat a pan over a high heat and add the chorizo - cook for a few minutes until it is charred. Once cooked, set aside
Cut the bread in half and toast on the pan in the chorizo oils until charred
Place the salad onto the roll and then add the chorizo. Top with grated cheese and chimi
