Choc Fudge Cookies
These are just like a brownie, but in cookie form! They are so chewy and fudgey, you must try them!
I love the way these cookies look once they are baked, the crinkled look from the icing sugar makes them look so good!
They taste just as good too, when you bite into them, it is like biting into a fudgey brownie.
A key tip with these is so to ensure you refrigerate for at least 1 hour as this helps them stay nice & thick when you bake them!

Ingredients:
200g dark baking chocolate, chopped
60g unsalted butter, chopped
1 cup plain flour
1/2 TSP baking powder
Pinch of salt
2 eggs at room temp, if not sit them in a bowl of hot water for 5 mins
3/4 cup caster sugar
1 TSP vanilla extract
1/3 cup icing sugar
Method:
Melt the chocolate and butter in a heat proof bowl over simmering water or in the microwave in 30 second bursts, stirring in between. Set aside to cool slightly
In a bowl, combine the flour, baking powder and pinch of salt.
Using an electric hand mixer or stand mixer, beat the eggs and caster sugar for 2 mins until combined and pale in colour
Reduce speed to medium and pour in the chocolate mixture and vanilla and beat until combined.
Add the flour mixture and mix until combined
Cover and place in the fridge for 1.5 hours minimum - crucial step don’t skip it!
Preheat oven to 140c fan forced
Placing icing sugar in abowl
Shape dough into 4cm balls and then roll in the icing sugar until coated.
Place on a lined baking tray and press slightly to flatten
Bake for 12 - 15 mins until the edges are set
Cool on the tray for 5 mins, then transfer to a baking rack to completely cool. They are very floppy when warm, they set whilst they cool.
