Wonton Noodle Soup
This wonton noodle soup is something that warms the soul!
Wonton soup is perfect for a cold winters night when you are craving something warm, but so tasty. Making wontons is extremely therapeutic, takes a little bit of time but is truly worth it for the end result.
The fresh Asian flavours in the both of ginger, spring onions, garlic, goes perfectly with the wontons and egg noodles.
If you wanted, you could purchase wontons already made, which would make this a super quick weeknight meal!

Ingredients:
Wontons:
Wonton wrappers
300g pork mince
2 spring onions, finely chopped
1 TBS finely grated ginger
2 cloves garlic crushed
1 TBS soy sauce
1 TBS kecap manis
1 TBS Chinese wine
Dash Sriracha
Broth:
1L Chicken stock
3cm piece ginger roughly chopped
2 spring onions roughly chopped 5cm lengths
2 cloves garlic whole
2 TBS soy sauce
1 TBS Chinese wine
1 TBS kecap manis
1/2 TBS siracha
1 TBS caster sugar
Thin dry egg noodles
Asian greens
Fresh chilli, spring onions and homemade chilli oil to serve
Method:
Mix all the ingredients for the wonton filling together.
Fold the wontons by placing about 2 TSP of filling in the middle and then wet your finger and run it around the edges of the wonton. Fold diagonally to create a triangle. Dab one side with water and then fold in to make a little envelope. Press hard to ensure it is closed.
Continue until you run out of mixture.
Place them under a damp tea towel so they don’t dry out
Meanwhile, add some sesame oil or other oil to your pot and quickly fry off the garlic, ginger and spring onion just to get it going.
Pour in the chicken stock, soy sauce, kecap manis, Chinese wine and sriracha
Bring it to a boil and simmer for 20 mins until the flavours infuse
Meanwhile, bring a pot of water to a boil and add the dumplings and cook for 4-5 mins until they float
Quickly cook the noodles in the boiling water as per packet instructions
Discard of the spring onion, ginger and garlic from the broth
Place noodles and dumplings in a bowl and top with broth.
Top with spring onions and chilli oil and enjoy!
