Caramilk Cookies!
These cookies are quite possibly the best cookies you will ever try, prove me wrong!
They are light and chewy, best eaten 5 minutes out of the oven when they melt in your mouth!
Once cooled down, they end up crunchy but if you prefer them chewy, pop them in the microwave for 15 seconds!
The Caramilk chips are available at both Woolworths and Coles.
Prep Time: 20min
Cooking Time: 14min
Serves: 00
Ingredients:
260g Chocolate bits (I’ve used Caramilk bits)
200g unsalted butter, chopped
1 cup (175g) brown sugar
3/4 cup (165g) white sugar
1 TSP Vanilla extract
1 egg
2 cups (300g) plain flour
1/4 teaspoon baking powder
1/4 teaspoon bicarb soda
1/4 teaspoon salt
Method:
Preheat oven to 180c (I did 170c for fan forced)
Chop up your butter and place it in a bowl/stand mixer bowl
Add the sugars and beat on a medium speed for 8 mins until combined and creamy.
Add the egg and vanilla and beat for 2 mins until combined and fluffy
Sift in the flour, baking powder, bicarb soda and salt and beat until combined.
Stir through the chocolate
Roll the cookie dough into heaped tablespoons and place on a baking tray lined with baking paper.
Ensure they are at least 3cm apart on all sides so they don’t connect whilst baking
Bake for 13-14 minutes until golden brown
Allow to cool for 5 mins on the tray, and then completely cool on a wire rack.
Serve warm and enjoy!
