Airfryer Crispy Sushi Tacos
These crispy air fryer tacos are equally delicious and easy and are a must make!

I have filled with slices of salmon sashimi, avocado, and a drizzle of tangy kewpie mayo. However, the fillings are endless - I am thinking tuna mayo mix, schniztel or even honey soy tofu - the world is your oyster!

Serves: 3 tacos
Ingredients:
1 cup sushi rice
3 x seaweed sushi sheets
2 TSP Sushi Rice Seasoning
Fillings:
Sashimi Grade Salmon, Tuna, Chicken, Tofu
Avocado / cucumber
Kewpie Mayo
Sriracha
Spring onions
Method:
Cook your sushi rice - I use a rice cooker so if using the stove please follow instructions on the pack. One cup of sushi rice cooked in rice cooker is enough for 3 tacos.
Once cooked, fluff and spread out onto a tray to cool.
Spoon over the sushi rice seasoning and toss to combine. Leave in fridge until required
Cut your seaweed sheets into circles
Working with wet hands, spread a thin layer of rice on all seaweed sheets leaving about a 1cm on the edge free
Spray with oil
Assemble in the air fryer - if you have a large basket air fryer, then create 3 x foil "logs” to help the tacos hold their shape. Place the foil in between each taco to give them shape
Cook at 180c for 15 minutes
Meanwhile, cut up your fillings
Once cooked and crispy, fill with your favourite fillings and toppings and enjoy!
