Serves: 4


Ingredients:

  • 1 TBS olive oil

  • 25g butter

  • 6 garlic cloves, crushed

  • 1 TSP chilli flakes

  • 1 TBS italian herbs

  • 1/2 cup white wine (sub chicken stock)

  • 400g passata

  • Handful of grated parmesan cheese

  • Stracciatella cheese (or a burrata)

  • Pasta of choice

  • Fresh basil

Method: 

Prepare your pasta as per packet instructions in a pot of salted water

Heat a pan over a medium-high heat and add the olive oil and butter

Add the garlic, chilli flakes and italian herbs and cook for 2 mins

Add in the white wine and simmer until reduced

Add the passata and mix to combine

Simmer for 15 minutes on a low heat

Once pasta is cooked, transfer into the pan and stir until combined

Top with parmesan cheese and mix until combined

Dollop the stracciatella over the pasta and top with fresh basil

Serve, stirring the straciatella through to get a creamy consistency
