Din Tai Fung - Spicy Pork Wonton Noodles Remake

This is one of my first, and most popular recipes!

If you know me, you know that I LOVE Din Tai Fung and always order the same thing when I go - the spicy pork wonton noodles so when I started my food blog, I knew i had to re-create this recipe.

This recipe is packed full of spice and flavour, it uses my Chilli oil recipe and in my opinion is pretty close to the real deal!

There is nothing better than dumplings and noodles in a spicy sauce, so I hope you love it!

Cooking Time: 20 min

Serves: 4


Ingredients:

Dumplings:

  • 350g pork mince

  • 1/3 cup chicken stock

  • 1 TSP chinese wine

  • 2 TBS soy sauce

  • 1 TBS sesame oil

  • 1/2 cup garlic chives - flat chives from fruit shop or asian grocer. Otherwise, use 1/2 cup chopped spring onion and 1 crushed garlic clove

  • 2 TSP grated ginger

  • 1 TSP white pepper

  • 1 pack round dumpling skins “gow gee”

Noodles:

  • 1/2 cup soy sauce

  • 1/2 cup black vinegar “Chinkiang vinegar”

  • 1/4 cup chilli oil

  • 250ml chicken stock

  • 1 TBS grated ginger

  • 2 TSP Sichuan Peppercorns - you will find these at your local Asian grocer

  • Wheat noodles - about 300g

 

Method: 

Dumplings:

Mix all ingredients together until combined

Take a teaspoon of mixture and place in the middle of the dumpling skin, dip your finger into water and run it around the edges.

Fold in half, and then bring each edge in and push to close the seam. Full video is on my Instagram

Cover them with a wet tea towel so they don’t dry out!

Place a bamboo steamer over a pot of boiling water and place the dumplings in with the lid on and steam for 8 mins

Noodles:

Toast the sichuan peppercorns in a wok for a few mins over a medium heat

Crush them with a mortar and pestle and add back into the wok

Add in the chilli oil, black vinegar, soy sauce, chicken stock and grated ginger.

Simmer for 10-15 mins

Meanwhile prepare your noodles as per packet instructions

Place the noodles in the bowl, then dumplings and then the soup!
