Sausage & Broccolini Rigatoni
A quick and easy pasta that is ready in the same time it takes to cook your pasta!
This recipe will very quickly become a staple in your household, it is quick but so tasty with minimal ingredients making it super easy for a weeknight meal!
The addition of goats cheese to this pasta is optional but also very not-optional because it adds an element of creaminess and brings the sauce together nicely.
I like to serve with rigatoni, but you could use any short pasta that you have at home and it will be just as nice!

Serves: 4
Ingredients:
2 TBS butter
1 TBS olive oil
1 TSP Chilli flakes (more if you like spice!)
4-6 cloves crushed garlic
1/2 cup white wine - optional
4 pork & fennel sausages - removed from the casing and into little balls
Salt & pepper to taste
1 bunch of brocollini - cut the chunky ends off and seperate into the smaller bits so it's easier to eat
1 x box Rigatoni
Goats cheese
Fresh parsley to garnish
Method:
Bring a pot of water to a boil and add a good amount of salt - add the pasta once you have started cooking the sauce
Heat a pan over a low heat and add the butter and olive oil. Cook until melted ensuring the butter doesn’t brown
Add the garlic and chilli flakes and cook for a few minutes
Add the wine, turn the heat up to medium and simmer for 5 minutes
Add the sausage and cook until browned
When there is a few minutes left until the pasta is cooked, add the broccolini into the pasta water to blanch. Take it out once it’s bright green and tender (I like to bite to ensure it’s cooked - you don’t want it too tender, it only needs 1-2 minutes)
Add the broccolini into the pan with the sausage
Once the pasta is cooked, transfer to the pan bringing some pasta water along with it. Mix until combined. Add more pasta water if you think it needs it!
Drizzle with a little bit of olive oil and add salt and pepper to taste
Top with goats cheese and fresh parsley
