Halloumi Tacos

Halloumi tacos are the perfect meat-free Monday meal to make!

Halloumi in tacos, it’s a game changer! When you are looking for a meat free meal, this is your perfect option!

Halloumi cooked until its gooey and then drizzled in honey served on a soft taco with a fresh salsa - yum!

Another little secret in this recipe is the garlic butter corn, they are little flavour bombs!

Ingredients:

  • 1 x packet halloumi

  • Mini Soft tacos

  • Red cabbage, shredded

     

    Salsa:

  • 1 x can of corn

  • 1 clove garlic, crushed

  • 1 x Capsicum

  • 1 x Avocado

  • 1/2 red onion, diced fine

  • 1 lime

     

  • Coriander to garnish

  • Honey for drizzling

     

    Hot Sauce:

  • Kewpie Mayo - 2 TBS

  • Hot sauce - 1 TBS

  • 1 lime

 

Method: 

Chop the capsicum and avocado into little cubes for the salsa and set aside. Mix in diced onion and coriander

Finely shred the red cabbage

Heat a pan over a medium heat and melt 1 TSP butter (or oil) and add the crushed garlic

Add the corn and cook until they start to brown and then add to the salsa

Mix the Mayo and hot sauce together

Cut the halloumi into thick slices and dry thoroughly with paper towel

Heat a fry pan over high heat and cook the halloumi until golden on each side.

Meanwhile heat the soft tacos in another pan until they start to brown on both stores

Once the halloumi is cooked, drizzle honey and a squeeze of lime

Serve and enjoy!
