Fried Chicken Burgers
This is probably the best fried chicken burger I’ve ever had - and I’ve had a few!!!
This recipe uses my fried chicken recipe, and it makes the most delicious burger!
The crunchy fried chicken with the spicy mayo and that sweet soft brioche bun is something special! You are going to love this recipe, and if you do let me know below!
I would say its similar to a Zinger burger from KFC (probably even better!)

Prep Time: 20 min + min 1 hour marinating time
Cooking Time: 30 min
Serves: 8 burgers
Ingredients:
Fried Chicken:
8 chicken thighs - fat removed
1/2 TBS Crushed fennel seeds
1/2 TBS crushed celery seeds
1.5 TBS sweet paprika
1 TBS smoked paprika
1 TSP cayenne pepper
500ml butter milk
2 TBS maple syrup
2 cups flour
1 TBS baking powder
Salt & pepper
2L vegetable oil for frying
Burgers:
8 brioche buns
Burger cheese
Little gem lettuce, washed
Bread & Butter Pickles
5 tablespoons egg mayo
3 tablespoons franks hot sauce
Method:
Fried chicken:
Combine all spices in a large bowl
Toss the chicken thighs in the spices until coated
Pour over the buttermilk and maple syrup
Marinate for 1 hour minimum up to overnight in the fridge
Combine flour, baking powder, salt and pepper in a large tray
Heat vegetable oil over a medium/high heat until 180c. If you do not have a thermometer, then poke a skewer into the oil and if it bubbles around it then it is ready.
Remove chicken from marinade and let it drip, toss in the flour mix ensuring it is completely covered
Then place it straight into the hot oil for 7 mins, turning constantly so it evenly browns. If it is browning too quickly, the oil is too hot.
Once cooked, place on a wire rack with paper towel below and top with sea salt flakes.
Repeat until you have cooked all chicken

Burgers:
Mix together the egg mayo and hot sauce and set aside
Arrange the burgers - bun, lettuce, chicken, cheese, pickles, spicy mayo and then the top bun
Serve with fries & enjoy!
