Beer Battered Fish Tacos
Perfectly battered fish with a fresh crunchy salsa and spicy mayo!
This recipe will teach you how to get a perfectly battered piece of fish for a really yummy taco!
The fish goes perfectly with the fresh salsa as it balances it out, and then you get a taste of the creamy avocado & spicy mayo - so delicious!
A fresh flathead fillet works perfectly for this recipe as they are just the right shape and size! If you didn’t want to batter the fish, you don’t have to - you could season it with some sweet paprika, salt and cayenne pepper to give you those nice Mexican flavours!
Also, I love adding coriander to mine for some freshness but I know this is a controversial topic so feel free to leave it out!

Ingredients:
Fish:
3 pieces flathead fillets cut in half
25g cornflour
Batter:
110g self raising flour
75g corn flour (1/4 cup)
200ml chilled beer
30ml chilled soda water
Salsa:
1 tomato finely diced
1/2 capsicum finely diced
1/2 red onion finely diced
Coriander finely chopped
1/2 lime squeezed
Spicy Mayo - mix together 1/3 cup egg Mayo and 1 TBS franks hot sauce (taste and add more if required!) \
Soft tortillas
Red cabbage, shredded
1 avocado
2 TBS sour cream
1/2 lime squeezed

Method:
Prepare the salsa by mixing all finely diced ingredients together and squeeze of lime
Make the guac by mashing up the avocado and then add the sour cream, lime juice and a pinch of salt
Heat vegetable oil over a high heat until 180c (test by throwing a small piece of bread and if it goes golden, it’s ready!)
Coat the fish in cornflour
Sift the flour and corn flour together and then whisk in the beer and soda water (dont over mix!)
Dip the fish into the batter and straight into the hot oil
Cook for 4-5 mins until golden and cooked through and drain on a paper towel
Warm the tortillas up on a pan until slightly browned
Spread guac, spicy Mayo onto the tortilla and then add the fish. Top with red cabbage and salsa
Garnish with additional coriander and enjoy!
