DFC Aka Danie’s Fried Chicken

If you’re a fried chicken lover, you’re going to love this one! It is the perfect fried chicken recipe - crunchy on the outside and juicy in the middle.

This fried chicken recipe is a recipe I have been making and perfecting for a long time, it is very similar to a Southern Fried Chicken and is seriously delicious!

The chicken is marinated first in buttermilk and spices and then the secret ingredient is the baking powder! When the baking powder hits the hot oil, it gives it the crunch.

This recipe is also used in my Fried Chicken Burgers - which is another recipe you must add to the list!

Prep Time: 10 min + min 1 hour marinating time

Cooking Time: 30 min

Serves: 8 pieces


Ingredients:

  • 8 chicken thighs - fat removed

  • 1/2 TBS Crushed fennel seeds

  • 1/2 TBS crushed celery seeds

  • 1.5 TBS sweet paprika

  • 1 TBS smoked paprika

  • 1 TSP cayenne pepper

  • 500ml butter milk

  • 2 TBS maple syrup

  • 2 cups flour

  • 1 TBS baking powder

  • Salt & pepper

  • 2L vegetable oil for frying

 

Method: 

Combine all spices in a large bowl

Toss the chicken thighs in the spices until coated

Pour over the buttermilk and maple syrup

Marinate for 1 hour minimum up to overnight in the fridge

Combine flour, baking powder, salt and pepper in a large tray

Heat vegetable oil over a medium/high heat until 180c. If you do not have a thermometer, then poke a skewer into the oil and if it bubbles around it then it is ready.

Remove chicken from marinade and let it drip, toss in the flour mix ensuring it is completely covered

Then place it straight into the hot oil for 7 mins, turning constantly so it evenly browns. If it is browning too quickly, the oil is too hot.

Once cooked, place on a wire rack with paper towel below and top with sea salt flakes.

Repeat until you have cooked all chicken
