Choc Coated Bliss Balls

These bliss balls seriously taste like they should be bad for you, but they aren’t and they are SO YUM!

They are perfect to keep in the fridge when you are craving something sweet so you can just grab one (but warning they don’t last very long well not in my house!)

They are packed with ingredients that are good for you like Medjool dates, cacao nibs and cashews. They are blitzed up and then coated in dark chocolate and they are sooo delicious.

Also added bonus - if you are gluten intolerant then these are for you! Just make sure that the dark chocolate is gluten free.

Ingredients:

  • 2 cups raw cashews

  • 16 medjool dates, pits removed

  • 2 TBS coconut oil

  • 1/2 cup cacao nibs

  • 1 TSP peanut butter

  • 1/2 scoop protein powder - I used P92 Peanut Butter collagen protein

  • 250g 70% dark chocolate & 1 TSP coconut oil

  • Sea salt flakes & desiccated coconut to dust on top

 

Method: 

Pour boiling water over the dates until they are just covered and let them sit for a few mins

Add the dates, cashews, cacao nibs, peanut butter, protein powder, coconut oil and a bit of the date water into the food processor/blender

Blitz until it is combined, adding more date water if needed to get it to the right consistency. If you like it chunky, you can leave it like that or continue to blitz until smooth

With wet hands, take a heaped tablespoon of mixture and roll into balls and set aside.

Place in the fridge for an hour to harden up (if you don’t have the time you can skip this step)

Melt the chocolate with 1 TSP coconut oil

Place each ball in the dark chocolate and turn with 2 forks until coated. Place on a lined baking tray

Sprinkle with sea salt flakes and coconut and enjoy!

They will keep in the fridge for a week, or you can freeze them!
